Open 1985 / 86 until Summer 1992

Our very first restaurant! Both Sabine and I were still at hotel school when we opened up La Pomme! It was a house which we turned into a restaurant with a lovely view of the port of Punta del Este. Some of the dishes of the 1st menu were Bouillabaisse – Arguably the most famous fish stew of the Mediterranean soon became our signature dish and a dish that remained on the menu for the entire 8 summer seasons of La Pomme. Coq au Vin was another classic of the 46 cover French Bistro which soon became a favourite of many for it’s family style cooking & relaxed, friendly and efficient servce. Both Sabine and I have many fond memories of La Pomme and Punta del Este and will share some photos sooner then later of the days in Punta del Este.

While I am a passionate cook I do not consider myself a Chef and as we wanted to take things to another lever we bought aboard Chefs such as Luisa Gonzalez Urquiza, Maria Robles as I joined Sabine on the floor. Days by the beach, asados, nights at San Rafael Casino, eating Chivitos on Golero, partiers with the gang from Bleu Blanc Rouge – so much fun.
