Dad whilst not one of the worlds great chefs does have some classics! Amongst them I have fond memories of his Curries and Stews! Not too many more however this is a beauty and later addition to his repertoire!
- Chicken Pieces (Like Wings) 1kg
- 2 Slices ham
- Ginger 2.5cm
- Onion chopped
- 3 Sprigs parsley (chopped)
- 4 Peppercorns
- Salt/pepper
- Chicken Stock 8 cups
- Corn 1 475 g tin of creamed corn
- Shallots (spring onion) 5
- Cornflour (to thicken) 4 tablespoons
- Seseme oil
A) Boil chicken pieces with onion/ginger/chicken stock/seseme oil/p&s.peppercorns.
B) When chicken is cooked, shread and disguard bones, add corn/shallots and thicken with cornflour, add sliced ham/parsley.
C) Add 1-2 chillies if liked.
D) Also 2 beaten egg white at the end for a few mins.if liked, puur into soup in a thin stream.
