1. Puree beans

    Cook the beans in salted water, add a chopped onion and a vanilla. Blend to get a smooth puree.

    Put in a high-vacuum bag, lobster tail, seasoned, orange juice and a tablespoon of achiote. Remove the vacuum and steam for 8 minutes.
  3. Crispy vegetables

    Slice all the vegetables finely and store in ice water.
