On a recent trip to New York I had the opportunity to entertain clients and friends of Mayakoba at Floyds new restaurant Paowalla on Spring street in Soho NYC. There were 15 of us and I was indeed excited to see my friends new gig – Sabine and I studied with Floyd many years back and he has participated in a number of the different Food & Wine events I have created over the years – The Park Hyatt Mendoza’s Masters of Food & Wine, Sao Paulo Food & Wine @ The Grand Hyatt Sao Paulo and Punta Mita Gourmet & Golf in Punta Mita. All that said as I entered Paowalla I loved the vibe, the colors, the location, the bar, uniforms and overall look & feel – the stage was set. Being a large group was great as we were able to sample a number of Paowallas offerings and we were not to be disappointed beginning from the breads and different dips & chutneys to those delicious ribs I was able to savour those ever so fond flavor memories I have of authentic Indian cuisine from my days as a kid in Fiji. The service was friendly & efficient and the timing of the meal down to a tee.
